1. Besan Cheela

A besan cheela is an Indian pancake cooked with gram flour, herbs, veggies, and spices. It is a protein-rich, nutritious pancake, can be on your breakfast or snack menu.

Ingredients

  1. 1 cup besan (Gram flour)
  2. 1/2 teaspoon Red chilly powder
  3. 1/2 teaspoon Carom seeds
  4. Grated Carrot
  5. Finely chopped Capsicum
  6. Olive Oil
  7. Grated paneer
  8. Chaat Masala
  9. Maggie Masala

How to Make

  1. Firstly, measure out 1 cup of besan and place it in a mixing bowl.
  2. Stir in 1/2 teaspoon of red chilly powder, 1/2 teaspoon of carom seeds, and salt to taste.
  3. Combine all of the besan cheela components with a wire whisk now, and then, depending on the consistency and quality of the besan, add an additional 3 to 4 tablespoons of water.
  4. Whisk until the batter is smooth and flowing. If there are any lumps, make careful to break them up while mixing the batter.
  5. Finally, you can start making besan cheela. I cook my besan cheela on a nonstick pan, but you may use any well-seasoned frying pan or tawa. Heat the frying pan on a low to medium-low heat and ladle the batter into the centre.
  6. Brush it with olive oil before adding the batter.
  7. Gently spread the batter over the pan using a measuring cup or long spoon, being careful not to break the cheela.
  8. Then, cook the cheela on a low to medium-low heat until the top looks done or you see some air pockets.
  9. You can also spread chopped vegetables like carrots and capsicum on it and roast it.
  10. After 2 minutes, spray a few oildrops around the cheela to help it not stick to the pan.
  11. Cook until the base is light golden.
  12. Now it’s time to flip your besan cheela and cook the other side.
  13. Cook until golden spots appear on the cheela.
  14. After that transfer your besan cheela from the pan to the serving dish.
  15. Meanwhile, take grated paneer and season with maggie masala and chaat masala to taste.
  16. Finally, spread the paneer mixture over the cheela and serve with tomato ketchup or mint chutney and a nice cup of tea.

2. Moong Cheela

Moong cheela is a nutritious dish. It has the goodness of moong, which is high in protein and fibre. It aids in cholesterol reduction.

Ingredients

  1. 1/2 cup whole green moong
  2. 1/2 cup yellow moong dal
  3. 1/2 cup rice
  4. 2 green chilly chopped
  5. 1/2″ ginger chopped
  6. Coriander leaves
  7. Salt to taste
  8. Olive Oil

How to Make

  1. Firstly, In a bowl take whole moong, yellow moong dal, and rice.
  2. Rinse them well with water at least 2-3 times.
  3. Then soak everything in enough of water for 4-5 hours.
  4. Later place the soaked moong, yellow moong dal, and rice in a blender jar. Then, add the green chilly, ginger, cumin seeds, and coriander leaves.
  5. Then blend all ingredients to make a purée.
  6. The batter’s consistency should be neither too thick nor too thin.
  7. Pour the puree in a bowl and add salt to taste. Mix it well with a spoon.
  8. On the other hand, heat a pan over medium heat and drizzle with olive oil.
  9. Spread the batter in the centre of the pan.
  10. After that drizzle a little oil along the sides and in the centre.
  11. When the moong cheela turns golden and begins to separate from the sides, flip it over.
  12. Finally, cook for a few minutes on the opposite side.
  13. Take the cheela from the pan and serve it in a dish.
  14. Serve your moong cheela with mint chutney or tomato ketchup.

3. Cucumber Cheela

  1. 2-3 Garlic cloves
  2. 2-3 Green chilies
  3. 1 teaspoon cumin seeds
  4. 1 teaspoon carom seeds
  5. 2 cucumbers
  6. 1 cup rice flour
  7. 1/4 cup fine semolina (rava)
  8. Finely chopped fresh coriander leaves
  9. Salt
  10. Water
  11. Olive Oil

How to Make

  1. Firstly, make a coarse paste of garlic, green chilies, cumin seeds, and carom seeds in a blender together.
  2. On the other side, peel the cucumbers and remove the stems.
  3. Then, grate cucumbers into long shreds.
  4. In a bowl, mix rice flour, semolina (rava), blended paste, coriander leaves, salt and cucumber. Add water to make a pouring consistency batter.
  5. Cover and rest the batter for about 10 minutes.
  6. Next, heat the pan over medium heat and drizzle with olive oil.
  7. Once the batter has been thoroughly mixed, place a ladleful in the centre of the pan and spread it evenly.
  8. Cover and steam the cucumber cheela for around 30 seconds.
  9. Remove the lid and roast until the bottom side turns golden.
  10. Flip the cucumber cheela and cook it on the other side as well.
  11. Finally, transfer the cucumber cheela from the pan to your serving dish once it has been evenly roasted on both sides.
  12. Serve your crispy hot cucumber cheela with mint or coconut chutney.

4. Oats Cheela

  6. 1/2 teaspoon turmeric powder
  7. 1/2 teaspoon cumin seeds
  8. 1/4 cup rice flour
  9. Pinch of asafoetida powder
  10. Curry leaves finely chopped
  11. Water
  12. Olive Oil

How to Make

  1. To begin with oats cheela, coarsely ground the oats in a mixing jar.
  2. Transfer it to a bowl, add enough water, and mix it well. Let soak this for 10 to 15 minutes.
  3. Next, add some water along with the rice flour, onions, ginger, green chilies, coriander, curry leaves, salt, turmeric, asafoetida, and cumin powder. Mix all ingredients well.
  4. After 5 minutes, dilute with a little water if needed.
  5. Now, heat a pan. Pour the batter into the pan and spread it out evenly.
  6. Meanwhile, drizzle some oil to the edges.
  7. Once the oats cheela is cooked, flip it over and spray a little more oil over the sides again.
  8. Now, wait until it cooked on the other side.
  9. Finally, wait until the second side of the oats cheela is cooked.
  10. Once it has finished cooking, you can place it in a serving dish with mint chutney.
